No obstant aix\u00f2, \u00e9s important tenir en compte que la fruita tallada pot estar exposada a diferents tipus de contaminaci\u00f3 que poden posar en risc la salut dels qui la consumeixen. Algunes de les formes m\u00e9s comunes de contaminaci\u00f3 inclouen:<\/p>\n\n\n\n<p>\u2022 <a href=\"https:\/\/www.qualitatis.es\/como-evitar-la-contaminacion-cruzada-en-5-sencillos-pasos\/\">Contaminaci\u00f3 creuada<\/a>: quan la fruita es talla en superf\u00edcies o amb utensilis que no estan nets, existeix un risc que es transmetin bacteris o altres microorganismes d&#8217;un aliment a un altre.<\/p>\n\n\n\n<p>\u2022 Manipulaci\u00f3 inadequada: si les persones que manipulen la fruita no es renten les mans correctament o no duen a terme les mesures higi\u00e8niques adequades, poden transferir microorganismes pat\u00f2gens a la fruita tallada.<\/p>\n\n\n\n<p>\u2022 Emmagatzematge inadequat: si la fruita tallada es guarda a una temperatura inadequada, pot afavorir el creixement de bacteris nocius que poden causar malalties aliment\u00e0ries. <a href=\"https:\/\/www.efsa.europa.eu\/en\/efsajournal\/pub\/3831\" target=\"_blank\" rel=\"noreferrer noopener\">l&#8217;Autoritat Europea de Seguretat Aliment\u00e0ria (EFSA) va constatar l&#8217;any 2014 que el bacteri Salmonel\u00b7la pot cr\u00e9ixer r\u00e0pidament en el mel\u00f3 tallat conservat a temperatura ambient, sense deterioraci\u00f3 aparent del seu aspecte.<\/a><\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"678\" src=\"https:\/\/www.qualitatis.es\/wp-content\/uploads\/2024\/08\/Fruta-cortada-como-garantizar-la-seguridad-alimentaria-1-1024x678.png\" alt=\"\" class=\"wp-image-56162\" srcset=\"https:\/\/www.qualitatis.es\/wp-content\/uploads\/2024\/08\/Fruta-cortada-como-garantizar-la-seguridad-alimentaria-1-1024x678.png 1024w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2024\/08\/Fruta-cortada-como-garantizar-la-seguridad-alimentaria-1-300x199.png 300w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2024\/08\/Fruta-cortada-como-garantizar-la-seguridad-alimentaria-1-768x509.png 768w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2024\/08\/Fruta-cortada-como-garantizar-la-seguridad-alimentaria-1-1536x1017.png 1536w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2024\/08\/Fruta-cortada-como-garantizar-la-seguridad-alimentaria-1.png 2048w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2024\/08\/Fruta-cortada-como-garantizar-la-seguridad-alimentaria-1-600x397.png 600w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Mesures_preventives_en_els_establiments_alimentaris\"><\/span>Mesures preventives en els establiments alimentaris<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Com a empresa aliment\u00e0ria has de saber que:<\/p>\n\n\n\n<p>\u2022 La normativa europea regula l&#8217;obligaci\u00f3 de mantenir els aliments a temperatures adequades i en concret portar un adequat control de la cadena del fred. No obstant aix\u00f2, estableix que es podran permetre, per necessitats pr\u00e0ctiques, que els aliments estiguin per\u00edodes limitats de temps fora de control de temperatura, sempre que aix\u00f2 no suposi un risc per a la salut.<\/p>\n\n\n\n<p>\u2022 L&#8217;Organitzaci\u00f3 Mundial de la Salut (OMS) indica que les fruites fresques tallades han de mantenir-se a temperatures de refrigeraci\u00f3 des del tall fins a la distribuci\u00f3.<\/p>\n\n\n\n<p>\u2022 La normativa espanyola indica que les fruites tallades o pelades, els vegetals tallats o pelats i els sucs no pasteuritzats llestos per al seu consum i elaborats, s&#8217;han de conservar a una temperatura igual o inferior a 4 \u00b0C.<\/p>\n\n\n\n<p>\u2022 Es permet mantenir les fruites voluminoses (mel\u00f3, s\u00edndria, papaia i pinya) tallades per la meitat o en quarts, a temperatura ambient (20- 25 \u00b0C) fins a 3 hores despr\u00e9s de realitzar el tall. Transcorregut aquest temps, aquestes fruites es col\u00b7locaran en un expositor refrigerat, mantenint-se aix\u00ed fins a la seva venda.<\/p>\n\n\n\n<p>\u2022 Els establiments que duguin a terme aquestes pr\u00e0ctiques han de registrar l&#8217;hora de tall i informar el consumidor (amb un cartell o etiqueta) que ha de refrigerar aquesta fruita.<\/p>\n\n\n\n<p>\u2022 A m\u00e9s, han de disposar de procediments documentats que garanteixin el control de temps\/temperatura en els seus sistemes de seguretat aliment\u00e0ria. Han de controlar les condicions d&#8217;exposici\u00f3 i de conservaci\u00f3 i habilitar zones i utensilis adequats destinats al tall de fruita que evitin la contaminaci\u00f3 creuada.<\/p>\n\n\n\n<p>\u2022 Els vegetals voluminosos tallats per la meitat, com ara cabdells, coliflors o similars no requeriran refrigeraci\u00f3.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Recomanacions_per_preparar_la_fruita_tallada_adequadament\"><\/span>Recomanacions per preparar la fruita tallada adequadament.<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>1. Tallar la fruita en petites quantitats que puguin ser venudes o servides al consumidor al m\u00e9s aviat possible.<\/p>\n\n\n\n<p>2. Descartar per al tall les fruites molt madures, o que tinguin ferides o esquerdes en la seva superf\u00edcie, ja que poden ser focus de contaminaci\u00f3.<\/p>\n\n\n\n<p>3. <a href=\"https:\/\/www.euskadi.eus\/contenidos\/informacion\/cont_alim_seg_micro\/es_def\/adjuntos\/NORMAS-MICROBIOLOGICAS-ALIMENTOS-2022.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">Has de saber que el Reglament n\u00fam. 2073\/2005 fixa per a les fruites trossejades llestes per al consum uns criteris microbiol\u00f2gics relatius als bacteris Salmonel\u00b7la, Listeria monocytogenes i Escherichia coli.<\/a><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Bacteris_mes_frequents_en_fruita_tallada\"><\/span>Bacteris m\u00e9s freq\u00fcents en fruita tallada<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Algunes dels bacteris m\u00e9s comuns que poden contaminar la fruita tallada i causar malalties aliment\u00e0ries inclouen:<\/p>\n\n\n\n<p>\u2022 Salmonel\u00b7la: aquest bacteri es troba comunament en ocells i ous contaminats, per\u00f2 tamb\u00e9 pot ser present en fruites i verdures contaminades amb femta animals.<\/p>\n\n\n\n<p>\u2022 Escherichia coli (E. coli): alguns ceps d&#8217;aquest bacteri poden causar malalties com la diarrea, i pot contaminar la fruita tallada a trav\u00e9s del contacte amb aigua o aliments contaminats.<\/p>\n\n\n\n<p>\u2022 List\u00e8ria: aquest bacteri pot ser present en aliments processats, com els embotits, per\u00f2 tamb\u00e9 pot contaminar la fruita tallada si no es manipula i emmagatzema de manera adequada.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Mesures_preventives_en_la_llar_per_a_la_fruita_tallada\"><\/span>Mesures preventives en la llar per a la fruita tallada<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Per a prevenir malalties aliment\u00e0ries en la llar, \u00e9s important seguir algunes recomanacions b\u00e0siques:<\/p>\n\n\n\n<p>\u2022 Rentar la fruita abans de tallar-la: Encara que la fruita ja estigui rentada, \u00e9s important tornar a esbandir-la amb aigua potable abans de tallar-la per a eliminar possibles residus de pesticides o altres contaminants.<\/p>\n\n\n\n<p>\u2022 Utilitzar utensilis nets: Assegura&#8217;t que els ganivets i taules de tallar estiguin nets i desinfectats abans de tallar la fruita. Aix\u00f2 ajudar\u00e0 a prevenir la contaminaci\u00f3 creuada d&#8217;aliments.<\/p>\n\n\n\n<p>\u2022 Consumir la fruita r\u00e0pidament: La fruita tallada tendeix a descompondre&#8217;s r\u00e0pidament, per la qual cosa \u00e9s important consumir-la en un termini de temps curt per a evitar la proliferaci\u00f3 de bacteris.<\/p>\n\n\n\n<p>\u2022 Emmagatzemar la fruita de manera segura: Si no consumir\u00e0s tota la fruita tallada immediatament, guarda-la en envasos herm\u00e8tics i refrigera-la per a mantenir-la fresca i segura per al consum.<\/p>\n\n\n\n<p>En resum, gaudir de fruita tallada a l&#8217;estiu \u00e9s una excel\u00b7lent manera de refrescar-se i alimentar-se de manera saludable. No obstant aix\u00f2, \u00e9s important tenir en compte les <a href=\"https:\/\/www.qualitatis.es\/7-claves-de-seguridad-alimentaria-para-el-procesado-seguro-de-alimentos-los-planes-de-requisitos-previos-de-higiene-y-trazabilidad\/\">mesures de seguretat aliment\u00e0ria necess\u00e0ries<\/a> per a prevenir la contaminaci\u00f3 i garantir la innocu\u00eftat dels aliments.
