Aquest format ajudaria el consumidor a calcular de forma r\u00e0pida la informaci\u00f3 num\u00e8rica de calories i proporcions d&#8217;hidrats de carboni, greixos, fibra, prote\u00efnes, sal, que cont\u00e9 un determinat aliment. Un dels grans reptes als quals s&#8217;enfronta la nostra societat contra \u00e9s la gran epid\u00e8mia que suposa l&#8217;obesitat i el sobrep\u00e8s.&nbsp;La gesti\u00f3 de la ingesta de certs nutrients pot prevenir malalties com l&#8217;obesitat, la&nbsp;<a href=\"https:\/\/www.nlm.nih.gov\/medlineplus\/spanish\/ency\/article\/001214.htm\" target=\"_blank\" rel=\"noreferrer noopener\">diabetis<\/a>&nbsp;i les&nbsp;<a href=\"http:\/\/www.fundaciondelcorazon.com\/informacion-para-pacientes\/enfermedades-cardiovasculares.html\" target=\"_blank\" rel=\"noreferrer noopener\">malalties del cor.&nbsp;<\/a><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"700\" height=\"400\" src=\"https:\/\/www.qualitatis.es\/wp-content\/uploads\/2020\/12\/Informacion-nutricional.png\" alt=\"Informaci\u00f3 nutricional\" class=\"wp-image-25554\" srcset=\"https:\/\/www.qualitatis.es\/wp-content\/uploads\/2020\/12\/Informacion-nutricional.png 700w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2020\/12\/Informacion-nutricional-300x171.png 300w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2020\/12\/Informacion-nutricional-600x343.png 600w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/figure>\n\n\n\n<p>L&#8217;estudi del que avui us parlem, dut a terme per investigadors de la Universitat d&#8217;Illinois, als Estats Units, es va dur a terme amb l&#8217;objectiu de millorar una investigaci\u00f3 anterior en qu\u00e8 es feia servir un sistema d&#8217;etiquetatge com un &#8220;sem\u00e0for&#8221;. En la investigaci\u00f3 pr\u00e8via dels aliments es designaven com verd, groc o vermell segons el consum de calories. No obstant aix\u00f2, el sistema no va tenir cap efecte sobre les compres dels consumidors quan diversos nutrients van ser codificats en color.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter\"><img decoding=\"async\" width=\"610\" height=\"343\" src=\"https:\/\/www.qualitatis.es\/wp-content\/uploads\/2019\/01\/Informaci\u00f3n-nutricional-gr\u00e1fica.jpg\" alt=\"Informaci\u00f3 nutricional dels aliments de manera gr\u00e0fica\" class=\"wp-image-19135\" srcset=\"https:\/\/www.qualitatis.es\/wp-content\/uploads\/2019\/01\/Informaci\u00f3n-nutricional-gr\u00e1fica.jpg 610w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2019\/01\/Informaci\u00f3n-nutricional-gr\u00e1fica-300x169.jpg 300w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2019\/01\/Informaci\u00f3n-nutricional-gr\u00e1fica-600x337.jpg 600w\" sizes=\"(max-width: 610px) 100vw, 610px\" \/><\/figure>\n\n\n\n<p>Als Estats Units, des de 2010 hi ha una llei que obliga a donar informaci\u00f3 cal\u00f2rica dels men\u00fas, de manera que les cadenes de restaurants han de proporcionar informaci\u00f3 sobre les calories en els seus men\u00fas si \u00e9s requerit pels consumidors. No obstant aix\u00f2, Manabu Nakamura, professor associat de nutrici\u00f3 a la Universitat d&#8217;Illinois, afirma que la majoria de la gent, excepte els que tenen problemes de salut o al\u00b7l\u00e8rgies a aliments espec\u00edfics no solen demanar veure aquesta informaci\u00f3, o no saben com utilitzar la informaci\u00f3 proporcionada .<\/p>\n\n\n\n<p>L&#8217;equip de Nakamura va idear dos experiments utilitzant una trama visual de 2 dimensions que mostra els valors de fibra i prote\u00efna per caloria per a cada element del men\u00fa. El gr\u00e0fic tamb\u00e9 inclou un quadre d&#8217;informaci\u00f3 que indica les quantitats di\u00e0ries recomanades d&#8217;aquests nutrients per caloria d&#8217;aliments.<\/p>\n\n\n\n<p>A continuaci\u00f3, va demanar als participants que recordessin la informaci\u00f3 nutricional de l&#8217;etiquetatge en el qual es mostrava la informaci\u00f3 per als aliments, b\u00e9 de forma gr\u00e0fica o b\u00e9 emprant la taula d&#8217;informaci\u00f3 nutricional com la que estem acostumats a veure des de fa poc m\u00e9s d&#8217;un any a Espanya, arran de l\u2019entrada en vigor del&nbsp;<a href=\"http:\/\/eur-lex.europa.eu\/LexUriServ\/LexUriServ.do?uri=OJ:L:2011:304:0018:0063:es:PDF\" target=\"_blank\" rel=\"nofollow noopener noreferrer\"><strong>Reglament<\/strong><strong>&nbsp;UE n\u00ba1169\/2011<\/strong><\/a>. Els usuaris van mostrar una precisi\u00f3 per recordar un 43% m\u00e9s gran quan se&#8217;ls va mostrar la informaci\u00f3 gr\u00e0ficament enfront de la taula num\u00e8rica.<\/p>\n\n\n\n<p>El segon experiment va ser un estudi de 12 setmanes en el qual participen els clients que es col\u00b7loquen a la cua per demanar i pagar pel seu menjar en els registres de prop de l&#8217;entrada d&#8217;un caf\u00e8.<\/p>\n\n\n\n<p>Aqu\u00ed, la fibra, prote\u00efna, greix saturat i sodi per valors de calories de cada element de men\u00fa es van representar en el gr\u00e0fic de dues dimensions o num\u00e8ricament. Es va aportar informaci\u00f3 sobre el control de pes, el que limita els greixos saturats i sodi, i es va col\u00b7locar l&#8217;augment de fibra i prote\u00efnes, que els clients podien veure abans de demanar.<\/p>\n\n\n\n<p>Els resultats van mostrar que quan la informaci\u00f3 nutricional es presenta al consumidor de manera gr\u00e0fica, les calories adquirides d&#8217;entrada van disminuir en un 10% en comparaci\u00f3 a quan no es visualitza cap informaci\u00f3, i van disminuir en un 13% en comparaci\u00f3 a quan es va proporcionar informaci\u00f3 de forma num\u00e8rica.<\/p>\n\n\n\n<p>Per contra, la representaci\u00f3 gr\u00e0fica va veure que les calories dels articles secundaris comprats disminueixen un 43% en comparaci\u00f3 a quan es mostrin etiquetes, i el 47% en comparaci\u00f3 a quan es mostra la taula num\u00e8rica.<\/p>\n\n\n\n<figure class=\"wp-block-image alignright\"><img decoding=\"async\" width=\"422\" height=\"640\" src=\"https:\/\/www.qualitatis.es\/wp-content\/uploads\/2019\/01\/etiquetado-nutricional-c\u00f3digo-barras.png\" alt=\"\" class=\"wp-image-19133\" srcset=\"https:\/\/www.qualitatis.es\/wp-content\/uploads\/2019\/01\/etiquetado-nutricional-c\u00f3digo-barras.png 422w, https:\/\/www.qualitatis.es\/wp-content\/uploads\/2019\/01\/etiquetado-nutricional-c\u00f3digo-barras-198x300.png 198w\" sizes=\"(max-width: 422px) 100vw, 422px\" \/><\/figure>\n\n\n\n<p>La prote\u00efna per caloria va augmentar en gaireb\u00e9 el 24% quan el gr\u00e0fic era present en comparaci\u00f3 amb quan no es va proporcionar cap etiqueta d&#8217;informaci\u00f3 nutricional, i un 20% a partir de la taula num\u00e8rica.&nbsp;<\/p>\n\n\n\n<p>Segons Nakamura &#8220;Aquest pot ser el primer estudi que mostra els canvis de compra en funci\u00f3 de la visualitzaci\u00f3 de la informaci\u00f3 de la nutrici\u00f3&#8221;. Els autors pensen que mirant les calories d&#8217;un aliment en triar el menjar els clients no tenien prou informaci\u00f3 sobre altres nutrients tingut fixar-se en seleccionar un dinar saludable.<\/p>\n\n\n\n<p>&#8220;En termes de manteniment de pes, es poden reduir les calories, per\u00f2 potser \u00e9s millor augmentar la prote\u00efna per caloria i el mateix amb la fibra, fibra per augment de calories, va dir Nakamura.&#8221; Aquestes dues coses han de ser mantingudes o que \u00e9s una mala dieta que no es pot mantenir. &#8220;<\/p>\n\n\n\n<p><strong>\u00c0rees futures d&#8217;estudi.<\/strong><\/p>\n\n\n\n<p>Els investigadors esperen que la gr\u00e0fica es pugui utilitzar per presentar la informaci\u00f3 nutricional en els restaurants, botigues de queviures, i menjadors, aix\u00ed com a les llars per a l&#8217;an\u00e0lisi de les receptes.<\/p>\n\n\n\n<p>A m\u00e9s, els futurs estudis sobre aquest m\u00e8tode gr\u00e0fic poden anar m\u00e9s enll\u00e0, aprofundint en diverses poblacions, estudiant els men\u00fas que ofereixen una major varietat en l&#8217;oferta de fibra, i les combinacions de m\u00e9s nutrients.<\/p>\n\n\n\n<p>Una altra possibilitat \u00e9s la creaci\u00f3 d&#8217;aplicacions m\u00f2bils amb la gr\u00e0fica que els consumidors puguin utilitzar per tra\u00e7ar els nutrients en els elements de men\u00fa, ja que l&#8217;ordre durant les situacions de temps limitat.<\/p>\n\n\n\n<p>&#8220;Esperem que aquest sistema d&#8217;Informaci\u00f3 nutricional dels aliments de manera gr\u00e0fica puga ser ent\u00e9s de forma r\u00e0pida i pot proporcionar la informaci\u00f3 necess\u00e0ria per prendre una decisi\u00f3&#8221;, va dir Nakamura.<\/p>\n\n\n\n<p>Font: Nathan S.
